Nuts & Chocolate Energy Bars
You’re less likely to grab something unhealthy if a healthier alternative is available. At least, that is the case for me. These energy bars were created to avoid munching on sugary granola bars.
When I was working in the Caribbean as a dive instructor we carried oranges and granola bars on board, some days even freshly baked banana bread! Having a mayor sweet tooth, I found it almost impossible to resist snacking on these sugary treats during my time at the surface. My job was pretty active and I couldn’t usually make it between breakfast and lunch without a snack of some sort. So I decided it was time to carry something on board that would satisfy my sweet craving, give me some energy between meals and replace the unhealthy alternatives.
This is just one version of them, but they are easy to make and you can add and replace with your favorite ingredients.
- 12 Medjool dates
- 3/4 cup sliced almonds
- ½ cup shaved coconut
- 3 tbs raw cacao powder
- 1 tbs coconut oil
In a food processor, blend the dates, coconut oil and cacao powder to a thick paste. Add 1/2 cup of almonds and half of the coconut and blend shortly till you get a chunky mass that you can easily shape and stays together. Mix the remaining almonds and coconut together and sprinkle half of the mixture in a parchment-lined square tray (I used a small oven tray). Press the date mixture in the tray evenly. Top the remaining almond-coconut mixture on top and press firmly. Refrigerate for 1-2 hours and they are ready to be cut in whatever shape you like!
Keep them in the fridge, covered or wrapped up, for up to a week!
