Cocoberry Protein Smoothie
One thing I’ve been missing while living on Aruba is super fresh produce. Hardly anything is grown on the island (however, more initiatives are popping up) and by the time produce arrives by boat and is put up in the shops it’s easily 2 weeks old. By now I know the container arrives on Tuesday, new veggies are in the stores some time by Wednesday and you have to buy your greens and fresh items before the weekend. By Monday your lettuce is pretty much dead and some shelves are empty. Oh and finding a good avocado is an expedition, even more so than anywhere else.
Needless to say you need to get creative sometimes when you live here and smoothies are an excellent way to go. Berries here don’t last long. Organic produce is either impossible to find or way expensive. So I opted for buying a massive bag of frozen mixed berries. I also freeze fresh bananas so I always have a batch handy for emergency breakfast.
This smoothie is one of my favorites. It’s simple, creamy, sweet enough and has some good nutrition packed in it. I used my frozen berries for this one, but at home I love to make it with fresh berries when it’s berry season (right about now I believe). I also use canned organic coconut milk which I managed to find here for a price that makes my eyes water.
- 1 cup mixed berries
- Half a banana
- ¼ cup coconut milk
- ½ cup coconut water
- Handful of spinach
- 1 scoop of your favorite protein powder
How to prepare:
Combine all ingredients in to a blender and blend until smooth. Poor in a glass or mason jar and enjoy! I love topping my smoothies with some granola, seeds or fruit to make it more of a meal.
